FRISEE ENDIVE SALAD

A quick and simple salad! Ingredients: 1/4 cup balsamic vinegar, 2 tbsp shallots, 1 tbsp honey, 1/3 cup olive oil, salt and pepper, 3 heads of endive, 1 cup beets, 2 heads of frisee lettuce, 2 oranges, 1/2 cup toasted hazelnuts Directions: 1. Whisk balsamic vinegar, shallots and honey in a medium bowl to blend. Gradually whisk in oil. Season the vinaigrette to taste with salt and pepper. 2. Toss endive, frisee, oranges and beets in a large bowl with enough vinaigrette to coat. Season the salad to taste with salt and pepper. 3. Serve! Original Recipe Found Here |

GREEN GARLIC PASTA SALAD

Healthy lunch idea for the warm weather! Ingredients: 2 stalks green garlic, 8 oz whole wheat pasta, 1 tsp olive oil, 6 tbsp soy sauce, 1/4 cup white sugar, 3 tbsp rice vinegar, 1 tbsp toasted sesame seeds, 2 tsp sweet chilli sauce, 1 tsp sesame oil, 2 green onions, 1 cup carrots, 1 cup cabbage, 1/2 onion, 1 tbsp peanuts Directions: 1. Cook pasta according to package. Cool down and toss with olive oil. 2. Whisk soy sauce, sugar, vinegar, chilli sauce, and sesame oil in a bowl. 3. Add vegetables to pasta. 4. A healthy and fibrous dip! Ingredients: 1lb fava beans, 2 medium chopped tomatoes, 1 small diced onions, 1 cucumber diced, 1/4 chopped parsley, 2 cloves garlic (minced), 1 lemon (juiced), 3 tbsp olive oil, 1 tsp ground cumin, salt and pepper Directions: 1. Blanch fava beans until tender. 2. Combine all the ingredients in a mixing bowl. Toss ingredients and season with salt and pepper. 3. Serve as a side or a dip for tortilla chips/ flat bread! PEACH AND LETTUCE SALAD

A sweet and refreshing salad! Ingredients: 1 head of escarole, 1 head of red leaf lettuce, 2 tbsp olive oil, 1 tbsp rice vinegar, 1 tsp mayonnaise, 1 peach (sliced), 4 oz cheese, 1/2 cup walnuts, salt and pepper to taste Directions: 1. Slice escarole and red leaf lettuce. 2. Combine oil, vinegar, mayonnaise in a bowl. 3. Add lettuce into bowl and toss until evenly coated. 4. Season with salt and pepper. 5.
